This Mississippi Roast recipe is a Fall/Winter staple in our household. It is definitely one of our favorite comfort foods and its so easy to make. I love the fact that I takes me little effort to throw all the ingredients into the crockpot (with a liner of course cause who wants to make a bigger mess if you don't have to?) and have it cook all day. Plus, it smells absolutely wonderful - it just gives those cozy vibes on a cool Fall or Winter day.
Mississippi Pot Roast
Ingredients:
- 1 chuck roast
- 1/4 cup of water
- 1 stick of butter (sometimes I only use 1/2 and it turns out fine)
- 1 packet of Au Jus
- 1 packet of ranch seasoning mix
- 5-7 pepperchinis (you can do as many as you'd like. This gives it a bit of a kick so if you don't like too much spice, use less pepperchinis)
- 3 cubed potatoes (optional)
- 1 bag of baby carrots (optional)
Directions:
1. Place the roast (thawed) into the crockpot
2. Pour the water along the sides of the roast
3. Sprinkle the Au Jus and ranch seasoning mix on top of the roast so it coats the top of it.
4. Place the pepperchinis, potatoes and carrots along the sides of the roast.
5. For the butter, you can either place the whole stick on top of slice up and place randomly through the crockpot. Either will work fine.
6. Cook on low for 8 hours or high for 4-6 hours.
